Pumpkin Pumpkin Pumpkin!

Sorry all, but pumpkin is in season and it wouldn’t be a Thanksgiving without pumpkin pie, am I right? Before we all know it, October will be over and then November is here.

It’s time to start thinking about Thanksgiving food, and if your’e not a fan of pumpkin…then trust me, you will be after this. The great thing about this recipe is you don’t need to share. Too good to be true? Nope.

This pie like most of my other recipes, uses Myoatmeal.com oats. The crust was made using my Flax Me Please,” oatmeal blend which consists of 5 grain rolled oats & flax, and ground flax seed. There is no sweetener or flavor added to this blend because I wanted to add in my own, which I highly recommend to enhance the flavor.

So here it is folks, eat your pumpkin pie all to yourself this Thanksgiving!

Single Serve Pumpkin Pie

Pie Crust Ingredients:

  • 1/4 cup “Flax Me Please” MyOatmeal oats (or substitute regular rolled oats)
  • 1 “flax egg” (1 tbsp ground flax + 3 tbsp water)
  • 2 tbsp unsweetened applesauce
  • 1 packet of Truvia, or sweetener to taste

Pumpkin Pie Filling Ingredients:

  • 1/4 cup pumpkin puree
  • 2 tbsp unsweetened almond milk (or substitute milk of preference)
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1 packet of Truvia, or sweetener to taste
  • 1 tsp corn starch
  • 1/2 tsp baking powder

Instructions:

  1. Preheat oven to 400 F.
  2. In a small dish, mix together your ground flax and water. Set it aside, and let it sit for at least 5-10 minutes until it gets to be “egg-consistency.”
  3. In a food processor, grind up your oats into a fine flour. Transfer to a bowl, and add in your truvia, applesauce and “flax egg.”
  4. Spray an individual ramekin or mini-pie pan with non-stick cooking spray. Transfer your pie crust mixture into the dish, and mold it to the dish so it resembles a pie crust, set aside.
  5. In another bowl, mix together all your ingredients for your pumpkin filling. Pour your pie filling into your crust.
  6. Bake in the oven for at least 20 minutes.
  7. Let it cool for at least 5 minutes, cover it up and place in the fridge to chill for at least 1 hour before enjoying. Top with ice cream, whipped cream, pecans, etc. if desired.
