Pasta made from beans, how can that be?!
Explore Asian is an innovative brand working hard to bring healthy and delicious food to people with certain dietary needs including but not limited to: gluten free, vegan, diabetic and fitness diets.
I first learned about this company when I spotted their black bean spaghetti in a health-food store near me. Never have I tried pasta made from beans, and it certainly did not disappoint. Not only was I amazed by the texture, appearance and flavor, but the nutrition facts blew my mind.
One serving of explore-asian black bean “pasta” is:
- 180 kcal
- 17 g carb
- 5 g sugar
- 2 g fat
- 12 g fiber
- 25 g protein!
They are also very easy to cook, and are ready to eat in less than 10 minutes!
Explore Asian was very generous to send me a package of each of their bean pastas to try.
In addition to their black bean spaghetti, they also carry a variety of other bean pastas including: adzuki bean spaghetti, soybean spaghetti, edamame spaghetti and edamame & mung bean fettuccine.
All of them have the same package directions which instructs you to boil a pot of water, and then add the pasta and simmer for 7-8 minutes until al-dente. Then you just drain your pasta in a colander, and top with your favorite sauce!
What also amazed me is the ingredients are simply just beans and water.
This pasta is high in protein and fiber, and is also very rich in iron which makes this a great product for vegetarians and endurance athletes (runners, cyclists, etc.). And since it’s very low in carbohydrates, it is a great alternative for diabetics who want to enjoy pasta more often.
There are so many things you can do with the pasta.
My take on fettucine alfredo with the edamame & mung bean pasta. I used a Laughing Cow creamy swiss wedge to make the fettucine “alfredo” sauce.
